Okay, I am being sneaky but I have decided to "slip" some vegetables into Harper's diet. I bought Jessica Seinfeld's cook book "Deceptively Delicious" and made Aloha Chicken and Macaroni and Cheese. The Aloha Chicken has sweet potato puree and the macaroni and cheese has cauliflower puree. Harper ate two helpings of the chicken and loved the mac-n-cheese!!!!

Aloha Chicken
ingredients:
1 cup whole-wheat breadcrumbs (I couldn't find them so I used regular bread crumbs)
1/4 cup flaxseed meal
1/2 cup sweet potato puree **see below on how to make puree**
1/4 cup pineapple puree **see below on how to make puree**
1 tablespoon reduced-sodium soy sauce
1 large egg white, lightly beaten
1/4 cup shredded, unsweetened coconut (I could only find sweetened)
1 pound boneless, skinless chicken breast or tenders, rinsed, dried and cut into "fingers"
1/4 teaspoon salt
2 tablespoons all-purpose flour
nonstick cooking spray
1 tablespoon olive oil
Directions:
1. In a bowl, mix the breadcrumbs w/the flaxseed meal. Set aside.
2. In a second wide, shallow bowl, combine the sweet potato and pineapple purees, soy sauce, egg white and coconut and mix w/a fork; set next to the breadcrumbs.
3. Sprinkle both sides of the chicken w/salt and then flour. Dip the chicken into egg-white mixture and then roll it in the breadcrumbs until completely coated.
4. Coat a large nonstick skillet w/cooking spray and set it over medium-high heat. When the pan is hot, add the oil.
5. Add the chicken in a single layer and brown 3-4 minutes on one side, until the breadcrumb coating is crisp and golden. (Turn down heat is the coating browns too quickly-coconut burns easily). Turn the chicken and cook 4-5 minutes longer, until the chicken is cooked through and browned all over.
**Making Purees**
Sweet Potatoes:
Prep: do not peel. cut into quarters.
Cook: steam 40-45 minutes.
Puree: scoop out the flesh and puree in a food processor or blender.
Pineapple:
Prep: I used already cut up packaged pineapples
Puree: in a food processor or blender for about 2 minutes.
