Heather's Heavenly Chicken Salad



Okay, now I am in love with this recipe!!! It is mostly mine. Yummy!!!!

Ingredients:
1 cup grapes (quartered)
1/2 cup red delicious apples (diced)
1/2 cup celery (chopped)
2-4 chicken breast w/skin and bone
1 cup mayonnaise
1/2 cup pecans
salt/pepper to taste

Preheat oven 350 degrees
Directions:
Place chicken on baking sheet, skin side up. Rub w/olive oil. Sprinkle w/salt & pepper. Roast 35-40 minutes (or until juices run clear). Set aside to cool.

When cool, remove skin and meat from bone. Cut chicken in 3/4 inch dice.

In a large bowl add chicken, quartered grapes, diced apples, chopped celery, pecans & mayonnaise. Mix until incorporated. Season w/salt and pepper. Serve on bib lettuce or on a croissant.

Barefoot Carrot Salad




This recipe comes from Ina Garten and was served at the original "Barefoot Contessa".

I really like it!

Ingredients:
1/3 cup golden raisins
1 pound carrots (I buy the matchstick ready to use available in produce section of store)
2 tablespoons freshly squeezed lemon juice
1/4 cup sour cream
1/4 cup mayonnaise
3 tablespoons sugar
1/2 teaspoon salt
1/3 cup diced fresh pineapple
Directions:
Place raisins in a small bowl and cover w/boiling water. Allow to sit for 5 minutes and then drain.
Place the grated carrots in a medium bowl, add lemon juice and toss.
For the dressing, whisk together sour cream, mayonnaise, sugar and salt. Pour dressing over carrots and add the pineapple and raisins. Toss together and serve.

Lightened Waldorf Salad


This recipe comes from the Better Homes and Gardens New Dieter's Cookbook. I think it is great! It goes well with chicken w/basil cream sauce (recipe below). Total calories 147

Ingredients:
2 cups cubed fresh pineapple or one 15 1/4 ounce can pineapple chuncks (juice drained)
1 1/3 cups coarsely chopped apples and or pears
1/2 cup thinly sliced celery
1/2 cup halved seedless red grapes
1/2 cup halved seedless green grapes
1/3 cup fat-free mayonnaise
1/3 cup fat-free or low-fat lemon yogurt
1 tablespoon honey
2 tablespoons wlanut pieces, toasted (I don't add them)

Directions:
In a large bowl toss together pineapple, apples or pears, celery and grapes. In a small bowl stir together the mayonnaise, yogurt and honey; fold gently into fruit mixture. Add walnuts before serving.
