Dinner This Week

Do you have a hard time thinking up things to make for dinner? Well Stacy (my sister) and I have decided to make it a joint effort. She will decide 1/2 the week and I will decide the other 1/2. That leaves one day so..... go out to eat!!!!!

Here Is Our Menu:

Monday- Stir Fry
I bought this package that had onion bell pepper and beef and it said stir fry but i thought i would stir fry it up and serve on flour tortillas with hot sauce and sour cream. And of course my fav. mex. rice.

Tuesday- Stuffed Bell Peppers
Because i am addicted to them right now!
6 bell peppers
2 cans mild rotel or crushed tomatoes if rotel is too spicy
1 can cream of mushroom
1 1/2 lb. Hamburger Meat
2 1/2 cup rice
1/2 onion
tsp thyme? just guestimate.
tsp chilli powder? this one too
tsp garlic?
velveeta
salt/ pepper

cook rice
cook hamburger meat with onion salt and pepper (I also add the tops of the bell peppers chopped)cut top off peppers clean seeds out and boil until soft (not too soft)combine meat, rice, cream of mushroom, rotel chunks of velveeta, thyme, garlic, chilli powderStuff bell beppers in 13x9 pan put extra around peppers shred a little velveeta on top of each pepper bake at 350 for about 20 min.

Wed- pan fried pork chops
corn on the cob
potato salad

Fri-Lemon Chicken w/Croutons (see my recipes)
Mashed Potoatoes
Green Beans

Sat- Sandra's Enchiladas (see my recipes)

Salad
