Pioneer Woman's Beans & Cornbread


I love Ree Drummond's blog (http://www.pioneerwoman.com/). She is a great cook and photographer. Here is one of her recipes that I am making for dinner tonight.

Ingredients: Thick Sliced Bacon, salt, pepper, "Fiesta" pinto bean seasoning (optional)

Directions: Measure four cups of beans and rinse them under cool water. If you see any little strange looking bits in there, pick them out and discard. Throw the beans into dutch oven or large pot. Put enough water in pot to cover beans (by 2 inches). Take four slices of thick-sliced bacon and cut into 1 inch pieces. Add them to the pot. Bring to a boil. Then cover and reduce heat to a simmer. We’ll add seasoning later on. After about 2 hours add 1 teaspoon of salt, 2 teaspoons black pepper and a few shakes of the pinto bean seasoning. Stir. Continue cooking until beans are tender. Add more seasonings as needed. Serve with cornbread. YUMMY!!!!

So, how'd they turn out. I make several of her recipes on a regular basis...especially the mashed potatoes, best I have ever tasted.
