Meatloaf Cups


Preheat oven: 350 degree


This is genuinely my recipe. It is meatloaf but instead of using a regular loaf pan I use a muffin/cupcake pan. I am not sure exactly how much of what I use so I will guesstimate for you! This is one of Harper's favorites. Yummy!!!!


Ingredients:
1-2 lbs ground beef
1/2 cup onion, chopped
1/4 cup green bell pepper, chopped
1 egg
1/2 cup bread crumbs
salt/pepper to taste
garlic powder (to your preference)
1/2 cup ketchup, divided
tomato paste (small can)
2 tablespoons brown sugar

Directions:
Combine beef, onion, bell pepper, egg, bread crumbs, salt, pepper, garlic powder, 1/4 cup ketchup. I use my hands to really mix thoroughly. Makes 12 good sized balls. In a small bowl mix 1/4 cup ketchup, tomato paste & brown sugar. Spread over tops of meatloaf. Bake at 350 degress approximately 40-45 minutes.

Italian Crescent Casserole

I haven't made this dish in a long time but I thought I would pass it on because it is sooo good. Maybe I'll make it this weekend......

Preheat oven to 375 degrees

Ingredients:
1 pound ground beef
1/2 cup chopped onions
1 jar spaghetti sauce
1 (8 ounce) can tomato sauce
1/2 cup sour cream
1 1/2 cup Monterey Jack cheese
1 can of 8 crescent rolls
1/3 cup grated Parmesan cheese
2 tablespoons butter (margarine)

Directions:
Brown beef w/onions; drain. Stir in spaghetti sauce and tomato sauce. Heat until bubbly. Combine Monterey Jack cheese and sour cream. Pour meat into ungreased 12x9 inch pan. Spoon cheese mixture over meat. Separate crescent rolls into 2 rectangles. Place over cheese. Combine Parmesan cheese and butter; crumble over crescent dough. Bake, uncovered, 18-25 minutes or until center is golden brown.

Sandra's Beef Enchiladas

This recipe is my step mother Sandra's. I am asked to make this more than any other thing! My brother in law Michael loves it and I make it for his birthday every year. Thanks for the recipe Sandra!!!!

Difficulty: Easy but messy

Preheat oven to 350 degrees

Ingredients:
1 large can of Chili (Wolf brand, no beans)
1/2 cup of water
Flour torillas
1 1/2 pound of hamburger
1 large onion (chopped)
2 cups Velveeta cheese (grated)

Directions:
Brown hamburger w/some of the onions. Drain. In a large bowl mix chili and water. Heat in microwave until hot. Dip tortillas in chili to coat both sides. Lay coated torilla in baking dish, add hamburger, cheese and onion. Roll tortilla and continue doing this until dish is full. Top with remaining chili, onion and cheese. Bake until cheese is melted.
