I had this in Fargo and it was really good! This is my aunt and uncle's recipe:
4 large cans chicken breast in water(drained)
2 cups finely chopped pickles
4 boiled eggs finely chopped
4 medium potatoes baked and smashed
2 cups finely chopped celery
1 1/2 sweet peas drained and smashed
1/2 to 3/4 can of chopped olives (4.25 oz can)
1 1/2 tsp salt to taste
mayonaise
combine together and serve on bread or by itself.

Pimento Cheese
This recipe comes from the great Paula Deen
Ingredients:
1(8-ounce) package shredded sharp Cheddar
1 (8-ounce) package shredded white Cheddar
1 (4-ounce) jar pimientos, with juice
1/2 cup mayonnaiseSalt and pepper
Directions:
Mix the shredded cheeses together with the pimientos. Stir in themayonnaise. With a metal spoon (pimientos will stain plastic or wood),stir until the mixture is well blended. Add salt and pepper to taste andstir again. Keep covered in the fridge until ready to use.Serve with corn chips or bread.
