Banana Nut Bread


Preheat oven to 325

Ingredients:
1 cup butter
2 cups sugar
4 eggs
1/4 teaspoon salt
2 teaspoons baking soda
4 cups flour
6 large ripe bananas, mashed
1 cup chopped pecans

Cream together butter and sugar. Add eggs, one at a time, beating after each addition. Sift dry ingredients together; add to creamed mixture. Stir in bananas and chopped pecans.
Pour banana nut bread batter into 2 well-greased loaf pans; bake at 325° for about 1 hour and 15 minutes, or until a toothpick inserted in center comes out clean. This banana nut bread recipe makes 2 loaves.

Stuffed French Toast

recipe from Goose Berry Patch Family Favorites cookbook

Ingredients:
8 ounce pkg whipped cream cheese
1 teaspoon vanilla
1/2 cup walnuts, chopped (I use pecans)
16 slices white bread
1 cup half-and-half
3 eggs, beaten
1/4 teaspoon nutmeg
1 teaspoon vanilla
-sauce recipe follows-

Directions:
Combine cream cheese, vanilla & nuts. Spread on 8 slices of bread and place remaining 8 slices on top to make 8 sandwiches. Cover w/wax paper and refrigerate overnight. When ready to prepare, dip sandwiches in half-and-half, eggs, nutmeg & vanilla. Fry on lightly greased hot griddle.

Sauce:
18 ounce jar apricot jam
1/2 cup orange juice

Heat jam w/orange juice, bring to a boil and stir until well mixed. Keep warm and serve w/toast.
